Find the album cover or picture you want to see for that album. You should be able to go onto iTunes, right click on the place where the picture would normally display. Then go to edit album info, and you should be able to browse your documents where you saved the picture you want and add it to the album. From then on it will display that picture.
If iTunes doesnt show the iPod there isn't a lot that you can do with putting music on it. The only way to put music on it and listen to it is that you use iTunes.
It really depends of whether you buy your music from itunes and keep the reciepts. If you make an inquiry to the itunes staff with the reciepts attached they could possibly replace the songs. You could use the argument that you already paid for them.

Updating the iTunes software will not affect your existing iTunes account or music library.
