The best way would be to place the package (sealed) in the refrigerator section, and let it thaw in there. Otherwise place the package (opened) on a kitchen counter at room temperature.

Yes you can definitely freeze cheesecake. Once baked and cooled for approx 2 hrs, refrigerate overnight then wrap in glad wrap, wrap again in foil and place cheesecake into freezer.
