First go to the app store
Second look at the bottom...the first icon in the row should be "features"...click on it
Third make sure when you are in features you also clicked on "New" at the top
Fourth go to the bottom of the page and there should be a button that says "Redeem"
Last click on the button and enter your code that is on the back of the iTunes card (you use a coin to stratch the silver lining off)
If this doesnt work you could also plug your touch into the computer and redeem it in the iTunes store
