second thickest if its a 4 string bass or 6 string guitar
As you pull off one string, replace it immediately with another, so you don't get confused. The 1st string is the high E or thin string at the bottom. Go in order 1,2,3,4,5,6. When winding the string make sure on the high strings you go under on the first turn so the rest of the string clamps down. If you do enough turns however, this may not be necessary. Just make sure the string is tight.

http://emedia.leeward.hawaii.edu/frary/changing_strings.htm << go to that website for how to change classical strings. When changing guitar string it is best for your guitar depending on how well built it is, to change them one at a time. This keeps the tension on the truss rod. After you replace one string, tune it, and move on to the next.
a few ways loosen the string till they come off if you want to save them break them off with say wire cutters burn them off play them tilll they break or... tune so tightly they break honestly though just replace the string you broke, its a waste of time unless you like the new string sound to replace all 6 strings.
