If it's like the 1999 Astra:- (1) adjust the steering wheel to lowest position. (2) carefully hinge open the plastic screw-covers either side of the steering, behind the wiper & indicator stalks (there are slots in the sides of the screw-covers). (3) undo these screws and the two going upwards in the top of the speedometer surround (Torx 2.0) and gently move the surround out. It's fairly bendable to get the top lugs out but don't blame me if you bend it too much and it snaps!. (4) undo the torx screws in the bottom corners of the instrument display. (5) Above the display, find a (yellow?) plastic handle which goes up 2mm to clear a slot and slides about 2 inches to the left - this is sliding the multiplug out of its socket. (6) Manouver the instrument pack out - I took it out face down , through the steering wheel. (7) locate the bulb behind the odometer. It has a slotted hexagonal lug on it - turn about 120 degrees and it comes loose. (8) Put in the new bulb (12V, 1.5W) which it's best to buy in advance and put it all back together! The Haynes manual suggests taking the steering wheel off first but I didn't find that necessary. Andrew

First of all, it is illegal to do so. Secondly, the only way is to disconect the speedo sender, which obviously also stops the speedo so you wont know how fast you are travelling, but that will stop the odometer.
The best way to fix a radio and odometer display that doesn't work is to check the fuses. When you replace the bad fuse then the lights should work in your dash.

Answer: You don't. That's illegal. Plus without speed sensor readings the transmission, cruise control and abs systems will not function correctly.
I would say you have a problem with the dash cluster. If both speedometer and odometer were not working I would say the problem may be the speed sensor but being only the odometer is out I would blame the cluster. I believe you will have to replace the cluster as a whole with a reconditioned unit. This will probably be a dealer item only.
This vehicle has a timing chain fitted.

It is non-servicable, so repair requires replacement of the speedometer/odometer assembly.
