Ctrl - C is the most common keyboard shortcut to copy highlighted text, but there are others, depending on the application you are using. For example, in Word you can use Shift - F2.

To turn Track Changes on using the keyboard shortcut, press [Ctrl]+[Shift]+E. This is a toggle. That means that pressing [Ctrl]+[Shift]+E turns it on and pressing [Ctrl]+[Shift]+E again toggles it off.
It is unlikely that you have a built in shortcut key. However, if you are using Microsoft Word you can set up a custom hotkey. A square root sign has character code 221A - you can find it under Insert: Symbol. From there you can set a keyboard shortcut; I've just set mine to Ctrl + SQ, which works fine. The standard shortcut key is "ALT"+ X
