Whenever i plug in my iPod touch, i see that the computer backs the ipod up whenever it is synching. The only solution i can think of is to go through your computer documents and look for ipod touch backup library. Good luck.
Notes can be accessed from your iDevice or from icloud.com. If you have deleted the note, you will no longer be able to see it.

Well you can't do this directly from your i-pod. First you have to plug your i-pod into your computer and open i-tunes. Then you go to i-pod device (which should show a picture of your i-pod) and then somewhere in there should be a category with notes. =P
