The official language of Tajikistan is Tajiki, which is a dialect of Persian. Russian is still used in government. (Note: the people of Tajikistan are called "Tajiks" the language they speak is "Tajiki")

Unfortunately, "ajikistan" does not refer to a specific language. However, Tajikistan is a country where Tajik is the official language. Tajik is a Persian language spoken by the majority of the population in Tajikistan.
The prefix -stan means "land of" in Persian and the Persian language used to be the dominant lingua franca of these countries (it still is in Tajikistan and half of Afghanistan though).

Salaam, I am not sure, but I think they say "Khuda Hafiz", which means "May God be your protector." It is a Persian phrase which is used in Iran, Tajikistan, Pakistan, some parts of India, and I believe in Afghanistan.
