"la soupe" is the vegetable one. "Le potage" and "le velouté" are nearly the same thing, but in a higher registry of language, or speaking of asparagus soup. You would use these (a bit showy) words on a restaurant menu.
In French, "Soup of the day" is "soupe du jour."
A vegetable soup is "une soupe de légumes, une soupe aux légumes" in French.
Either "Potage du jour" or "Soupe du jour" would work, but the first one is generally more preferred.
