You go down one to engage first gear and then as you accelerate you go up one (and most gear boxes automatically bypass neutral on the way up) and engage second gear, then up again for third and so on. On the way back down the gear box most gearboxes generally go from second into neutral, so essentially you slow down and stop before going down from second into neutral.
