I just made a folder, put all the photos I wanted on my iPod in it, then I clicked on the little pic of my iPod in the navigation bar. I went to photos, the second last tab, then selected sync photos from 'My Documents'. I chose the folder (don't forget to check 'selected folders' on the sync menu) I wanted to sync and pressed the sync button at the bottom of the page.

I made myself a separate folder called "ipod sync", then in iTunes, click on your iPod, click on the Photos tab, and select that folder. Then, to sync, just drag and drop the photos you want on your iPod/iPhone into that folder. The next time you sync your iPod, the photos will be on it.
iTunes is capable of syncing photos to your iPod. Plug your iPod into the computer that you sync with, go to the device in iTunes, and there should be a Photos tab. Tell it to sync a particular folder, navigate to the photo you want, and copy it across. Note: If you sync your iPod automatically with iTunes, don't delete the photo from your computer, or it will be removed from your iPod aswell. This is tested and works with an iPhone. It may be slightly different for the iPod that you have.
You have to have that photo already saved on your computer. Just connect the iPod to the computer, place the photos onto your iPod and sync it.

There are steps to this, but basically you Sync the photos from a folder on your computer to the file in your iTunes program. Look around at the header if you have the newest iTunes, it should have a button that says "Sync Photos"
Put the new photos on the same computer the originals were from if they aren't there already. Make sure they're in the same folder you sync with normally. Connect the iPod to the same computer the original photos are on. Select the iPod in the left side-bar. Click on the Photos tab, choose All Photos or put checks next to the new photos you'd like to add. Click Sync/Apply in the lower right corner. Note: There is no supported way to sync new photos from a different computer than the original one without erasing the photo library.
You have to open iTunes from your computer, plug in your iPod with the connector, click your iPod under devices, click photos in the tabs, and unselect sync photos and all the photos that you have uploaded, embarrassing or you just don't want them will go away. When you have your ipod hooked up to the computer, click on it, then click on pictures. It will want to know what folder to use and every time you sync it, any photos in that folder will be synchronized.
