I'm no expert, but as far as I have found. The season peaks in January but can last until June. The cold weather usually sweetens up the juice inside, but freezing temperatures hurt the fruit. I would say for the sweeter juice pick near the end of february or when the temperatures just start getting warmer. Keep and eye on the tree if alot of fruit starts falling off, probably a good time to start picking. Fruit that has fallen is still good to eat, just check it for any bugs or bad spots.

You wait until they're ripe and press the A button when you're in front of them. If you can't tell when it's ripe, then press A anyway and on a day it is ripe you'll pick it. It's not that hard, really.
