submerge the egg in cold water - a very fresh egg in water will lie on the bottom. One that is a week or so old will sit on the bottom but bob slightly. One that is three weeks or so old will balance on its small end, with the large end reaching for the sky. A bad egg will float, with the large end up.

The easiest way to tell is to look at it and smell it. If parts of the mayo are turning almost a clear color and more jelly looking it is bad. You can usually tell by the smell as well, as the smell changes when it goes bad. If it is bad, throw it out. Spoiled mayo can cause food poisoning. Once called ptomaine poisoning, but was debunked as not all ptomaine causes food poisoning. Oh, and refridgerate after opening.

That could be difficult to determine. Don't eat it is it has turned watery, smells strange, looks odd or has been sitting in the fridge for too many days. When in doubt, throw it out.
