Interceptor is not a a tool or part its a model name like LX, XLT, or Sport its just a name. It does however mean that your car is build a little different like sport tuned shocks and a beefed up motor just to mention a few.

I had a 2001 and yes they are fast. Try to find one with around 100,000 miles or so. I now have a 2002 and it has even more power and has better pickup than my 01 did.
