I'm not sure if you mean that part of the roast is bad because its been overcooked or burned, or if you mean part of it has spoiled. If its a matter of part being burned, you can try to salvage the part that isn't, although that acrid burned smell is pretty good at permeating everything it gets into. If you mean part of the roast has spoiled, this is not a good idea. The spoilage we can see and smell is just the tip of the proverbial iceberg, and probably far more of the roast, if not all, is bad than you realize. You are better off throwing the meat away and not risking an illness.
