You add a thickening agent like flour and water or cornstarch and water.

Method.

The easiest way to do this is add two tablespoons of flour or cornstarch to a sealable jar

and then add 1/3 cup cold water. Seal jar and shake hard to mix. Add this slowly to hot, not boiling stew and mix carefully trying not to break up your vegetables too much.

Return stew just to the boil and continue stirring until thickened.

The simplest way is to add a starch. Rice is a good option. Corn starch works too. Best option is a roux. Heat some fat and add flower. The fat can be butter or fat from meat in the stew. Cook over low heat and stir constantly until the desired color, (Lighter just to thicken gravy, dark brown called brick for something like gumbo) then add it to the stew.
