Anhydrous just means 'without water', it doesn't mean 'insoluble in water'. e.g. Copper sulphate usually exists as a pentahydrate, but can be anhydrous (meaning there is no water of crystallisation present), but is very soluble in water.

Dissolve the anhydrous compound in water then evaporate the excess amount of water by heating when solution becomes concentrated allow it to cool the crystals of hydrated compound thus formed are allow to dry.
