Press Shift + F10, the kneeboard will come up, go to "Checklists" and scroll down to the bottom, there will be "Aircraft shutdown" which will show you how to shut the entire plane down.
the shortcut to shut off engines is ctrl+shift+F1 umm to do it manually i think you can follow the checklist from the procedures kneeboard. good luck

The default to pause and unpause Microsoft Flight Simulator X is the "P key".
