I assume you are talking about memory that is taken up by data marked as 'other'. If so, it is files that are not music, videos, pictures or apps, so stuff like the GUI and such. I find that alot of it is the updated iOS software. I have a 2nd gen ipod touch, and everytime i update the software, the "other" amount increases. I have about 1 1/2 gigs of other, and that would make sense, having about 1 1/2 gigs of extra information from version 2.1 to version 4.2.1.
