If every fiber of your body is saying, 'This isn't the time to say what is in my heart' then don't do it! Your gut instincts will kick in and let you know. When you feel the time is right then say what you have to say straight from the heart and take the risk that the person will love you all the more for it. If they don't then consider it their loss.

Is it better to take an increase in salary or a bonus equal to that increase?

As long as you plan on keeping the job and have a reasonable expectation that you will be able to do so, the increase in salary would be better. A bonus is a one-time payment, and implies no guarantee of future bonus payments for similar performance. A salary increase would come every pay period, so if the bonus and the increase are equal, the increase would be preferred.
