I've been a cook at redlobster for 2 years now, the Maine tails which are the smaller ones are split, wishboned, we pull the meat out so they don't stick to the shell, then they are either broiled or grilled. With the rock lobster tails we cut the shell with scissors, pull the meat and it lays on top of the shell, then they are buttered, seasoned then broiled.

yeah they do i LOVE red lobster they serve king crabs snow crabs lobster tails but if you ever need to know anything like this again restaurants usually have their menus on line

The shell will be a red in color and the meat will be white with red on it.
You do not need to boil it for long. The longer it boils the tougher it gets. You need only boil the lobster for a few minutes. When the color is bright red. No longer than 5 minutes for 1 lobster.

Turn them upside-down, split them down the middle from head to end of tail, take out the tomalley (the green stuff). Combine tomalley with soda crackers and garlic butter. Stuff the lobster with the mixture. Wrap the claws (individually) with tinfoil, the tail with tinfoil, then the body with tinfoil Bake at 400 for about 15-20 minutes (stuffing will brown, body will turn red). Enjoy!
