If a truck has a clutch brake it would only be used when coming to a complete stop. By pushing the clutch peddle completely to the floor you would apply the clutch brake. This stops the clutch disc from spinning making it easier to shift into 1st or reverse gear. Normal shifting while driving you would not need to or want to push the clutch peddle to the floor to activate the clutch brake.
The clutch self adjusts, if the job was done right there is no break in period.

With my Audi the Hydraulic Clutch uses the break resavoir so as long as the break resavoir is filled up then you will be fine.
T5 Transporter clutch fluid is contained within the break fluid reservoir.

clutch is used to engage or disengage gears wher as brake is used to reduce i.e to retard the motion.
Check your firewall, I have seen them break or 'stretch' causing grief for clutch action.
