Not very well. Aint happening. The eagle dives down with intense confidence, hunger, and determination to eat. He digs his long, sharp claws into the salmon's meat, knowing the salmon is slipper - he makes certain to not lose his catch. The salmon does not have a chance. Oh sure, one or two have probably been dropped on accident; but I'm sure the eagle recovers it very quickly in the air, or perhaps at the water level. But the sharp-eyed eagle is not one to go home without dinner for its young and the eagle is a Survivor - for many thousands & thousands of years. The salmon is the eagle's fave meal.
