When you install a program, the installer, or on first run of the app, makes a file, in a hard to find place, in the registry or on the harddrive, normally encrypted, with details on when it should stop running. Each time the application in run, it checks the current date/time of the system and decides if it is on or past that date. If it is past its time, it will restrict options, or do something else depending on the product.
