As far as i know, I believe that the plate of earth underneath that's spitting out the lava has a little time limit going over it.

A volcano only erupts while liquid magma is being forced upward to the surface. When a magma chamber is empty, or when solidified rock plugs the volcanic vent, the eruption will at least temporarily stop. In some cases, emptying the magma chamber sufficiently will cause solid rock above the chamber to collapse on top of it.

The reason scientists can't tell when it will stop erupting is because they can't tell how much molten lava is under the volcano. Even if the volcano doesn't stop erupting, flights within Europe may be resumed, the reason we're getting all this ash is because the molten lava hits the iceberg on top of the volcano and the sudden change in temperature and pressure gives off masses of fine ash.
