Don't really know about the affects of ground water but the soil i got an answer for ya. Certain Crops when planted need a certain nutrient in the ground and constant planting of that crop will deteriorate the soil of that nutrient. A good example is the country of Israel. They proceeded to plant the same crops over and over again and are now living on baron land. The US changes its crop growth every year. That why you see one plot of land growing corn one year then the next there growing sow beans
