A lipid bilayer forms spontaneously whenever a collection of phospholipids is placed in water. This is because the amphipathic lipids (lipids having both polar and nonpolar regions) double up and put hydrophilic ends toward the outside and inside of the cell, whereas the hydrophobic tails are held in between the heads.
