Microorganisms survive and reproduce in wet conditions that cause food spoilage. Sugar creates a balanced environment so osmosis does not push water through the appleÕs cells causing it to expand.
Because there is so much sugar in jam, it is so concentrated that it creates osmotic pressure that draws the water out of any microorganisms that might get in it. In other words, it dries them out.
Any environment that is high on sugar or salt content is less apt to be hospitable to anything but yeast. Bacteria fails to thrive in any environment where high sugar or salt content is a factor. In order for sugar or salt to be in a liquid form, they require differing parts of water to be in a liquid state. For sugar, that ratio is 1:3. When a large amount of sugar being equal or greater to that ratio is added to a recipe, it means that water is not available for the bacteria to utilize to fulfill its life functions.
Salt works on the mechanism of osmotic pressure via the laws of diffusion. Water will always follow the solute. Therefore water is moving from a higher concentration of water to a lower. As water moves out of the apple, microorganisms can no longer grow. (Microorganisms cannot survive and reproduce without water) Therefore, the apple is preserved.
The best way to preserve an apple is to use cooking oil. It will keep the apple light in color and fresh from mold.

Sugar does not preserve apples... Only salt does

Water is water. It has no substances or chemicals in it that'll preserve the apple. Salt has sodium that preserves the apple. Our ancestors preserved meat with salt because water doesn't preserve things.
Both sugar and salt can preserve equally well and have been used as preservatives since bygone days. Salt is better used to preserve meat while sugar would do well as a preservative for fruits.
