In simple terms, sugar is used by the body for immediate energy. Unused sugar leads to an increase in fat stores. All carbohydrates ultimately break down into sugars (which is why so many people fear carbs), but different types of carbs break down differently. Whole wheat has become so popular lately because it breaks down slower in the body than white flour, allowing for a more steady release of sugar into the blood stream to be used, without having the body be overloaded with sugar all at once, and storing the unused sugars as fat.

Carbs/sugars are necessary for humans to function optimally, but consuming them in excess inevitably leads to weight gain.

All carbohydrates, whether sugars or starches, are digested in the intestine to form glucose, which is transported around the body via the blood and taken into cells to be converted into energy. The hormone insulin, secreted by the pancreas gland within the abdomen, controls this action of cell glucose uptake. Excess glucose is converted into glycogen, which is stored in the liver or in fat around the body. If the body needs more energy, a second hormone, glucagon, is secreted by the pancreas which converts the glycogen back into glucose. It is then released back into the bloodstream so that with the help of the insulin, the cells can take up the glucose to release the energy they need. The glucose or sugar metabolism of the body is a cycle of glucose, insulin and glucagon reactions. The slower the release of glucose and hormones, the more stable and sustainable the energy levels of the body. It is generally accepted that the more refined the carbohydrate, the faster the glucose will be released into the blood, resulting in less stable energy levels in the body. Complex carbohydrates provide a slower and more sustained release of energy than the simple carbohydrates.

There are many different types of sugar that we consume everyday. From glucose, fructose, maltose to sucrose. The most common form of sugar is sucrose or, table sugar. We often use it as a sweetener.

Put simply, sugar is used as energy in the body. When you eat a substance that contains sugar - and this could even be something not sweet like rice or potatoes as they break down to glucose (sugar) during the digestive process - is it digested further in the stomach. It is then transported to the small intestine where it receives a bond Whig allows sodium (or salt) to attach to it. The sugar molecule is then transported the blood stream via the blood vessels in your small intestine and is delivered throughout your body using the blood stream network. Cells then open their "gates" and allow the sugar in and process it in the mitochondria - the power plant of the cell. It converts the sugar to energy, which gives you life. Obviously, if you consume more sugar than your body needs it stores it as something called glycogen for later use. Your body only has limited storage capacity for glycogen, so if you are eating excessive amounts it will convert it to fat.
