How does the multiple disks work and keep track of your progress in final fantasy VII?

It's all contained in your save file on the PS1's memory card. Once you complete disk 1, you save your game once more before switching disks. Your save file will now be set up to continue, using disk 2 instead.

No. Both are different types of RPG's. Phantasy Star is made by Sega and was released on the megadrive/genesis system. Final Fantasy is made by Square Enix and runs on multiple platforms except for sega genesis/megadrive. Final Fantasy games are much more user friendly.
