Hydrocarbons in fossil fuels (coal, oil and natural gas), when burnt, release water (hydro) and carbon dioxide (carbon). The carbon dioxide has been sequestered away for millions of years, so releasing it now means it is building up in the atmosphere causing an enhanced greenhouse effect, global warming and climate change.
