You can look at that in two different ways, but in either case the United Kingdom does not consist of two islands. One way is to say that there are many small islands that are part of the United Kingdom, so that is far more than two. In the other way, you could be thinking of just the two large islands of Britain and Ireland. However, in that case, only a small part of the island of Ireland is part of the United Kingdom, not all of it, so again it is wrong to say it consists of two islands.
