I have a Rock Bass (closely related to bluegill) and it goes dormant at night and when it is quiet during the day. It will sit still on the bottom, and if accidentally startled it will swim recklessly as though it is trying to avoid a predator. So this answer is not authoritative, but it does appear that bluegill do sleep.
