The first winter in Utah (1847-48) was actually relatively mild. Also, only the advance party of perhaps 100 men spent the first winter in Utah, having left their families in "Winter Quarters" in Nebraska. Because there were few men and the weather was mild, it wasn't too difficult to provide food and shelter for them. However, that first winter was misleading - the next winter, when several thousand Mormons had arrived, was extremely cold and snowy. They were unprepared for the extreme conditions and many became very sick or even died.
