As long as the food is kosher, it is permitted for it to imitate or be influenced by the preferences and available ingredients in the surrounding (non-Jewish) culture. This can partially explain why Sephardic foods often tend to be spicy (such as Harisa and Zechug), while Ashkenazim often tend towards sweet recipes (Tzimmes, Gefilte Fish).
