I would set the temperature between medium and high.
If you like your eggs softer and fluffy, the lower the temperature the better. Medium High temperature makes the eggs firm (as some people prefer).
If you're boiling them, that's 210 F. If you're frying them, it works best on low so they cook slowly and don't get rubbery. If you like the brown crispy edge on the egg, cook it on Medium-High.
