It should run between 195 and 220, it can go higher during hot days or hard use, but shouyld always come back down to that norm. That is the temperature the thermostat is set to release hot coolant into the radiator to be cooled.
Hey blown head get will cause it to run hot.
you should only use a 50/50 mix of coolant and water, otherwise corrosion will destroy the insides of the motor
well mabe your thermostat on the water pump is sticking or not enough water in radiator or yr just haveing to much fun
I also have a 2000 jeep wrangler. This year has a problem with the heater core plugging up. You can either try to flush it out, or just replace the heater core.
The system probably needs a recharge.

Heater CORE, not coil. The core is plugged and needs back flushing or replacement.
Check ground. if that's ok, use a test lite to see if it is hot (hot wire). If it is, pump is shot.
