Add a tbsp of white vinegar into a measuring cup add milk upto the one cup line, allow to curdle within 5-10 min. Or you can thin out sour cream to reach the same consistency as butter milk, add about 3tbsp of sour cream to a measuring cup fill with milk upto one cup line.

Buttermilk is very simple to make. It is a common kids project, and something fun to do with scout troops or as a summer project.

You use heavy cream, sometimes known as whipping cream. It is found in the dairy section of any grocery store. You will need a clean mason jar and a lid. Pour the heavy cream into the jar until it is about half full, and securely fasten the lid. Shake the heck out of the jar for about 15 minutes. The fat in the cream will bind, and a ball of butter will form in the jar. If you used a pint jar, the ball will be about the size of your fist. This is regular butter just like you get at the store. The remaining liquid will be buttermilk. You simply pour the liquid off into another jar, and you will have two new products, butter and buttermilk.

Emergency substitution for buttermilk when no heavy cream is available.

Ingredients

  • 1 cup Milk
  • 1 tbsp Vinegar or Lemon Juice

Procedure

  • Put milk in a glass and add vinegar or lemon juice to it.
  • Stir the mixture and let it rest at room temperature for 15 minutes (approx).
  • As soon as milk begins to curdle, stir the mixture well.
  • Buttermilk is all set to serve. For better taste, add ice and serve it cold.

Buttermilk is a term that is typically used to refer to milk that has been fermented by bacterial cultures. There are two methods:

Traditionally, to make butter, milk was left to sit to allow the cream to separate to make it easier to churn out. The lactic acid produced by the naturally occurring bacteria, which lowers the pH of the fat to de-emulsify it, also facilitates the process.

Nowadays, thanks to the pasteurization and homogenization processes that milk must undergo to be legally sold, the bacteria are destroyed, so the milk is inoculated with similar strains of bacteria to form artificial buttermilk (sometimes flecked with bits of butter to make it resemble the traditional product).

You can make real, homemade buttermilk by using the marble technique used to make homemade butter. Put cream into a clean container with a sanitized marble and shake it until the middle has a chunk of butter in the middle. Take the butter out and the liquid which is left is buttermilk. A fun and enjoyable way to make butter and buttermilk and it is also a fun activity for kids (I also made one once :D).

You can add a little vinegar to cow's milk and let it sit for about 5 minutes. Technically, it's soured milk as opposed to buttermilk, but it works just like buttermilk in recipes.
