Pure chocolate, like the kind you get from upscale chocolatiers, is made with only a few ingredients: sugar, cocoa solids, and cocoa butter. Sugar never goes rancid unless it gets wet, while cocoa solids and cocoa butter can last for about three years before starting to taste musty. Since these ingredients last a long time before going bad, chocolate makers don't have to do much to keep chocolate from spoiling!

However, chocolate that has been exposed to heat can often start to bloom; the fat will rise to the surface of the chocolate bar, and solidify, making the chocolate look bad and taste chalky. To help prevent this from happening, many chocolate makers add soy lecithin to their recipes. Lecithin acts as an emulsifier, and helps to keep the cocoa solids and sugar from separating from the cocoa butter. Chocolate makers also try to keep their products from being exposed to heat. To do this, they may use refrigerated delivery trucks, or may try to deliver their products only during the cooler months of the year.
