Because we have binocular vision, when we view something we see it from slightly different angles. This difference is interpreted by the brain through experience and a three dimensional picture is built up.

The reason we have 2 eyes (binocular vision) is to be able to see depth/3D. The brain compares both images being sent to it at the same time and calculates depth based on what our experiences tell us is accurate. You might notice that a baby often reaches for things that are obviously too far away - its gaining experience about depth perception.
