How is fat useful in cooking?

It adds to the flavor of some foods. It causes foods to brown when cooking which develops a caramelization of the natural sugars in the food. Fat keeps baked goods tender. Fat also carries some flavors which allow you to taste some of the compounds in food that you wouldn't taste without the fat.
