Steel with the correct amount of nickel alloyed with it makes what is commonly called "armor plate", one of the toughest alloys of steel there is, hence an excellent material for safes.
Nickel is a non renewable resource because you can't make more of it. Once a mine runs out of nickel it won't make any more.
you can't as such make them nickel free but it does help if you put a coating if clear nail polish over the area that is in contact with your skin.

I'm assuming you're familiar with the different metals used to make coins. When the Mint eliminated silver from circulating dimes, quarters, and halves back in 1965, proof coins were also switched to the same cupro-nickel "sandwich" composition. Unfortunately cupro-nickel is a harder alloy than the old 90% silver alloy so the new proof coins never struck up quite as sharp as their older counterparts. In response to collectors' demands (and to make more profit) in 1992 the Mint re-introduced proof sets that had the dime, quarter, and half struck in 90% silver. You can now buy either type of proof set each year, although the silver ones obviously cost a lot more than the cupro-nickel ones.
