There are two main types of Pu-erh that are made in different ways. Raw or sheng (green) Pu-erh is prepared like most Chinese green tea (pan-fired in a wok, to kill the enzymes that cause oxidation), and then often (but not always) pressed into bricks. Raw pu-erh tends to be very strong and is often not consumed right after production: instead it is aged, often for years, in order to allow the flavor to mellow out.

Ripe or shu (cooked, black) Pu-erh has been processed in such a way to imitate the effects of the aging process. Ripe pu-erh is produced by storing the tea in a warm, humid environment, allowing mold and bacterial cultures to more quickly change the chemical composition of the tea. This process is relatively new, started in the 70's, and is used primarily as a cost-saving measure, to produce smooth-tasting Pu-erh without the long aging process.

After Pu-erh is produced at the factory, it is then aged. This is accomplished by storing it in a container with some air circulation, such as an unglazed ceramic jar or a glazed jar with a cloth placed over it in place of a lid. Some pu-erhs can be aged for many years. Pu-erh can also be aged around other aromas, allowing it to become scented, such as by putting it inside hollowed-out fruit so that it acquires the aroma of the fruit.
