It isn't fresh anymore. I'd be leery of it.
You must put it in the fridge, otherwise there is no other good way of keeping it fresh. Still always look at the expiration date.
By the time that you've asked this question and someone has answered it, you could have found out the easy way - by putting one in the freezer and checking to see whether it has come alive yet or not.
Unopened they can last a few months. In the fridge even longer, probably 6-12 months. Opened, they will only last 4-7 days before they start to tast funny and go stale if you dont put them in a fridge. You can still smoke them but it wont taste as fresh as the first few you had from the pack. Stay Lit!

The dough will begin to ferment after ~5 days; a process that can be avoided by freezing. After fermentation, the bread can still be used, but it may not rise. I have used pizza dough that was in the fridge for 3 weeks... it came out thin crust... but tasty.
Yes. It can go in the fridge now. It should go into the fridge within 2 hours or less of being removed from the heat. Separate it into smaller pieces to help it cool faster.
