I'd say for about a week, but In the restaurant biz they only let you keep perishable food 7 days from the day it was made but the whole idea of fresh salsa is to be fresh. Any longer that a day or two and the acids tend to break down the ingredients and it losses its fresh look and taste.
If it has been made fresh and has been refrigerated it should last a week as long as it has not been contaminated by saliva. Example: people have been eating directly out of the dish. Saliva actually breaks down food just as if it was part of the digestion process so if you fear double dippers, just throw it away.
If is has been hot bath canned it can stay safely on the shelf as long as the lid has not popped up or gives when you push on it.
