Well I left a cheesecake in the fridge for 17days and then eat it and I wasn't ill at all. Most people wouldn't keep a cheesecake in the fridge for that long anyway, but I did!

Fill with water to 2/3 up the side of your cheesecake pan. (If using a springform pan, wrap the pan with foil to keep water from seeping in.)When the center of the cheesecake is set, but still a litle jiggly, remove all from the oven and allow the cheesecake to cool in the water until it's at room temperature. Then chill.
