First just a point of clarification: The so-called "forbidden fruit" was actually not identified in The Bible as an apple. In fact Gen 2:17 only identifies the name of the tree that the fruit existed on as "the tree of the knowledge of good and evil."
Regarding the length of time Adam and Eve had before other foods came along first consider this: Why would God create two beautiful perfect creatures, with smelling and taste sense far more potent than our today and then tempt them by forbidding them to eat food. The answer is God did not do this. At Gen. 1:29 God tells the fledging human pair "Behold, I have given you every plant yielding seed that is on the surface of all the earth, and every tree which has fruit yielding seed; it shall be food for you."
Looking back again at Gen. 2 this time verse 16 God states: "From every tree of the garden you may eat freely; but from the tree of knowledge of good and evil you shall not eat." So Adam and Even had an abundance of choices before them besides the fruit of the tree of knowledge of good and evil.
And that brings this question full circle. What then was the forbidden tree and its fruit there for? The answer can be surmised from Gen 3:22 where preceding the expulsion of Adam and Eve from the garden God states: "The man has become like one of us, to know how to distinguish between good and evil" (Amplified Bible).
So the test at the tree of knowledge of good and evil represented the first human pair's willingness to subject themselves to the instruction and rule of God, the creators, who had up to that point only provided what was good for them. Or they could make their own decision deciding for themselves what was "good or evil."
