Baby Mollies should not change colour. (They are not like goldfish) They are released from the females cloaca with their adult colouring. It is only hard to see variations/spots etc because the fish are so tiny. As they grow larger these different markings will become more evident.
8 weeks and you can put them in tank with other fishes, thats the age when they can survive on theyr own, how ever they start breeding already after 4 weeks , so try to seperate males and females if you dont want them to breed.
As long as it isn't small enough to fit in their mouths.

Not very long. We originally started out with 4 mollies in a 5 gallon aquarium. About 3 months later we realized 4 had turned into 17! Now they are in a 35 gallon aquarium and theres more! We have now had many babies, and watched them grow. Takes them about 6 months to become 2 inches long.
