As a general rule, potentially hazardous foods should not be allowed to sit out for more than 2 hours. Less time is better. If you don't know whether or not the food is potentially hazardous, pretend it is and go with the 2 hours or less.

I have always gone with 6 days or less for onion dip stored in a refrigerator. i would go with 5 days or less if the onion dip sits out and how many times it sits out uncovered. Its best to use a spoon and a small bowl. Using the original container sets up nasty double dipping (you know you do it!!!!) where germs from your mouth and fingers can get into the dip and multiply in such a moist environment. Your dip will stay fresher because its never dropping below the temperature of the fridge since its only open to spoon into a bowl. It is also true that i have no life, but at least I am maximizing my dippage while minimizing my trips to emergency room for a stomach pumping : )

It's true about the 2 hour rule. Even less if really hot. But it lasts until the sour cream expires if kept in the fridge and spooned out everytime
