It depends on the type and age of the tubor that you start with. Here's what I've found: basic domestic white - about 10 days; PEI red skin - about 14 days; small gem type varieties - less that a week. Try storing them in a paper bag, kept in the dark and check them about every 2 or 3 days. Once they sprout, split them so that each piece has at least 2 or 3 eyes growing. You should get a good yeild. I've experiemented with growing from peeling scraps and I've been successful. Good luck.
